**pumpkin cookies with caramel frosting**

A couple of friends have requested this recipe… so here it is!

 

Pumpkin Cookies with Caramel Frosting

1 cup unsalted butter

1 cup sugar

1 tsp. vanilla

1 cup canned pumpkin

2 eggs

1/2 tsp. salt

2 cups all-purpose flour

1 tsp. cinnamon

1 tsp. baking powder

1 tsp. baking soda

1/2 cup chopped pecans or walnuts, optional

1/2 cup raisins, optional

frosting:

3 T butter

4 T milk

1/2 cup firmly packed brown sugar (preferably dark but light will work)

1 1/2 cup powdered sugar

3/4 tsp. vanilla

Cream butter, sugar, vanilla, pumpkin, eggs, and salt in a large bowl.  In another bowl, mix flour, cinnamon, baking soda and baking powder; add to creamed mixture and mix well.  Add walnuts and raisins and mix.  Drop by rounded teaspoonfuls onto ungreased cookie sheet.  Bake in preheated 350 degree oven for 11-12 minutes.  Let cool.

To make frosting, combine butter, milk and brown sugar in saucepan.  Bring to a boil and boil for 2 minutes, stirring constantly.  Let cool.  Stir in sugar and vanilla.  Beat until smooth and creamy.  Frost cookies.

  1. ps – you can also use salted butter instead, just omit the salt in the recipe! And they really do taste good without the nuts/raisins, too!
